Butter cake with peach and cream

Another scratch made cake using a basic butter cake recipe and simply topping off with whipped cream and peaches. I was too lazy for serious decorations so i used some leftover mini mnms from gingerbread men baking to create the number 21. Yup, another dear friend's 21st!

Sadly, the cream was melting while we were out under the hot weather and the colours from the mnms started running. My friend said it created an artistic effect on the cake maybe trying to comfort me while i was fussing over the cake.

So what do you think? Does it look like 21? Could probably make a good colourblind test kit too haha!

Chocolate cake from scratch

Sak,nad and i made this chocolate cake together for fattie's 21st birthday. The chocolate cake was a recipe from The Cake Bible and the ganache from Good Housekeeping Cakes & Bakes. It was yummy when put together despite the cake batter being crumby. And i finally succeeded in slicing the cake into halves!

My 1st bread

I intended to make focaccia bread but there were no basil nor thyme leaves at home so i improvised by chopping up some garlic and using some random herb plant my mum grows. Things started out scary the moment i added water into the dry mixture with the dough being super sticky, there was just no way i could rid the goo off my hands and floured tabled top. Nearly gave up there and was close to dumping the goo into the bin. Luckily i did'nt and continued adding more flour whilst kneading, hoping the dough would resemble something like "smooth and elastic" as what the recipe instructed.

After some 8 mins, the dough was getting really fun to knead and it felt like squishing someone's fatty tummy or butt. Haha! Now, i know why people claim that baking bread helps relieve stress. Just imagine the dough to be a punching bag!

The end result of the bread was close to what a baguette is except that it was less fluffy and a little hard when cooled. Any tips on how to improve on this?? I baked my bread in a pan and the surface was uneven when ready. There were a couple of "mountains" and when i poked it open, it seem like an air bubble formed while baking. Is it normal??

Crepe Cake

Could'nt hold back on this one after looking at this! You need lotsa patience doing this but i must say the end result is truly rewarding and self satisfying. Not only must the ingredients be mixed together the day before the cake is done, a whole lot of patience is also needed to cook the crepes 1 by 1 and then finally layer them. Yes all 18 of them!

I've got this funny habit where i don't like using recipes just the egg whites/yolks seperately and this recipe calls for 6 whole eggs and 6 egg yolks! Oh that's excluding 1 broken egg which i accidentally dropped onto the floor. Butter fingers indeed.

There were strawberries sitting in the fridge so i added them into the layers and they tasted great together with crepes and cream. The cake was wiped out in 2 days so that's just testimony to how delicious it was!

Strawberry Yoghurt Cheesecake

Exams are finally over! What better reason to celebrate with yummilicious cheesecake that my sister said was as smooth as tofu. It's also suppose to be my mum's belated birthday cake but we don't do the cake cutting and birthday song singing anymore since she said she's too old for that. Anyways, my sister cut the cake before i could even take it out from the pan. (-_-)

I used jello for the jelly layer...a bit too wobbly and melts too quickly. So next time i'll try and make the jelly from scratch.

I AM CRAVING TO BAKE!!! Such a wrong time because exams are coming in a week!!

I am going to try oreo brownies, oreo truffles, ice cream cake, marble cake and many many new recipes i've bookmarked!!!

The reason why i am so inspired is because i've just pored through so many bake blogs (yeah why am i not poring through my lect notes instead?!) and i was thinking to myself how nice if i had a chance to know these people and pick up a tip or two from them. Even better if there could be a REAL bake community where bakers can all come together to exchange recipes and go for bake classes. Sighh...i even have wild thoughts of launching such a cca. Haha..if only..

Apple pie

My 1st try at pies and i've chosen pastelhearts's apple pie recipe to work with! Thanks for sharing =D

I wanted to cover the entire pie but my dough would'nt cooperate and kept breaking up. I was thinking if i should wait awhile after removing the dough from the fridge before i can roll on it. In the end, i attempted to make a lattice for the top. Turned out rather ok but i think i've used a little too much flour (i did'nt want my dough to break) and resulted in the crust being a tad dry and crumbly.

Anyway, the filling rocks! I added raisins to it and for the extra plumpness/juciness, soak it in a bowl of water first.

Nutella cupcakes

It looks fantastic but its taste is rather let-down. Maybe because it's a cupcake but everyone mistook this as a muffin and commented that it was too dry. I tried the recipe again and aded a tablespoon of milk and a dollop of nutella in between in hope of making the pastry a little more moist.

This failed and i'm hoping you guys can help improve on this recipe!

Rainbow Rocky Road Brownies

I have been itching to try out
a_sweet_fantasy's rocky road brownie recipe and it went very well! Thank you!!

I've left out the peanuts and replaced hershey kissables with MnMs. They were much cheaper! Haha.. Also cut the sugar portion by a half so it'd be less sinful!

instant chocolate cake

It's my best friend's 20th and everything is instant from White wings except the buttercream which i made using Wilton's recipe. My 1st try at baking layer cakes and i must say, that a whole lot of confidence is needed to slice the cake into 2 neat halves and cropping of the dome formation.
